Vegan Applesauce Pancakes
These pancakes are very tasty and suitable for fasting periods. They are perfect for those who follow a plant-based fasting menu. You can add any suitable filling, such as mushrooms, onion, carrot, soy mince, and so on. Enjoy!

Preparation
Step 1
Place the applesauce in a bowl. You can make it yourself or use store-bought applesauce, preferably with a natural ingredient list and/or from a trusted brand. You can also grate an apple or cut it into small cubes. It depends on your taste preferences. In that case, the pancakes will be similar to apple fritters, but they will still be very tasty.
Step 2
Pour in the water and mix well.
Step 3
Add the sifted flour in parts, along with the baking powder and salt.
Step 4
Add the sugar. Mix well until smooth, making sure there are no lumps. To taste, you can add vanilla powder, cinnamon, or lemon juice. I did not add any, because the pancakes already turn out very tasty and aromatic.
Step 5
Leave the batter to rest for about 30 minutes. It should be slightly thicker than regular crepe batter, similar to American-style pancake batter. You can also add more flour and make small fritters, or add a little more water, or less flour, to make the batter thinner.
Step 6
Heat a pan well and grease it with vegetable oil. You can fry the pancakes completely without oil in a nonstick pan for a lighter version, or use more oil for a richer version.
Step 7
Pour in a ladleful of batter and spread it evenly over the entire surface of the pan.
Step 8
After about a minute, flip the pancake and fry for another half minute.
Step 9
Remove the pancake from the pan.
Step 10
Repeat until all the pancake batter is used up. Grease the surface with oil as needed. Enjoy!
