Vegan Almond Cookies

Step 1
How do you bake vegan almond cookies? Prepare all the ingredients from the list. For these cookies, it’s best to use the healthier kind of rolled oats - the ones that take longer to cook.
Step 2
Rinse the raisins, place them in a small deep container, and pour boiling water over them for 10-15 minutes, fully covering them. Drain, then spread the raisins on a towel and dry them.
Step 3
Preheat the oven to 392°F (200°C). Line a baking sheet with parchment paper and spread the nuts on it - almonds in this case (you can swap in hazelnuts if you like). Toast the nuts for 8-12 minutes, until a distinct nutty aroma appears.
Step 4
Remove the baking sheet and transfer the nuts to your work surface. Let them cool.

Put the nuts into a blender.
Step 6
Blend until the mixture becomes soft and paste-like. While blending, periodically open the lid and check the texture. To keep the cookies from turning out too dry, blend the almonds to the right consistency for at least 10-15 minutes.
Step 7
In a separate bowl, mash a piece of banana and add liquid honey to the banana.
Step 8
Add sifted flour, then add sugar, salt, cinnamon, baking powder, and rolled oats. Add the nut paste as well. Mix everything so the ingredients are evenly distributed and you get one smooth, uniform mixture.
Step 9
Finely chop the dark chocolate with a knife. Add the chocolate pieces and the raisins to the bowl. Mix the dough, but do it quickly so the chocolate doesn’t start melting.
Step 10
Form the cookies. To keep the dough from sticking to your hands, dampen your hands with water. Brush the bottoms of the shaped cookies with vegetable oil and place them on a parchment-lined baking sheet. Preheat the oven to 356°F (180°C) and put the sheet in the oven.
Step 11
Bake for about 13-15 minutes, until the chocolate begins to melt. Remove the baking sheet right away so the cookies don’t dry out. I ended up with 8 almond cookies.
