Preparation
Step 1
Split the vanilla pods lengthways and scrape out the seeds, setting them aside. Place the pods in a saucepan with the cream and bring gently to the boil. Add the sugar and stir until fully dissolved.
Step 2
In a large bowl, whisk the egg yolks until smooth. Slowly pour in the hot cream mixture, whisking constantly to combine.
Step 3
Strain the mixture through a fine sieve into a clean bowl, then stir in the reserved vanilla seeds. Transfer the mixture to a freezer-safe container and freeze for 2-3 hours, or until firm.
