Uzbek Beef Shurpa

Preparation
Step 1
First, prepare the necessary ingredients from the list. What meat can be used besides beef? Lamb, pork, chicken, or turkey will work, but keep in mind that cooking time and calorie content will change. You can also add extra vegetables and spices to taste.
Step 2
Wash the meat, pat it dry, and cut it into small pieces. The meat should be boneless, only the flesh.
Step 3
Peel the potatoes and cut them into medium cubes.
Step 4
Peel the carrot and cut it into thin sticks.
Step 5
Grate the tomatoes on a coarse grater, leaving the skin behind. You can also use canned tomatoes instead of fresh ones.

Peel the onions and slice them into half-rings.
Step 7
Heat vegetable oil in a large pot or cauldron over high heat. Add the onions and sauté, stirring, until translucent.
Step 8
Add the meat to the pot and fry, stirring, until it develops a golden-brown crust. Finally, add cumin, khmeli-suneli, salt, and pepper, and mix well.

Add the chopped carrot and sauté, stirring, until the excess moisture evaporates.

Pour in 2.5-3 liters of hot water and bring it to a boil.

Simmer over low heat for about 1 hour until the meat is tender.

Add the potatoes to the pot and stir. Cook over medium heat for about 15 minutes until the potatoes are done.

Finally, add the grated fresh tomatoes and tomato paste, stirring well. Adjust seasoning if needed. Bring the soup to a boil and remove it from the heat.

Cover the pot with a lid and let the soup rest for about 10 minutes.

Pour the Uzbek Beef Shurpa into bowls, garnish with fresh herbs, and serve. Enjoy your meal!
