Preparation
Step 1
Prepare all the necessary ingredients. I recommend using homemade mayonnaise. That way you will know exactly what it is made of. Store-bought mayonnaise contains many additives, and it is also highly undesirable to subject it to heat treatment. Use large eggs, preferably home-raised, or at least size L. Home-raised eggs usually have a bright orange yolk, which will give the finished dish a beautiful golden color.

Crack the egg into a bowl.

Add salt. If you like, at this stage you can also add your favorite dried herbs or seasonings to the batter. Ground chili will add heat, dried garlic will add a distinctive aroma, and thyme and rosemary will add a piquant note.

Mix the egg with a fork.
Step 5
Add the mayonnaise. If you prefer, you can replace it with sour cream.
Step 6
At this stage, it is very important to mix the mixture well, because mayonnaise tends to form lumps, so stir very thoroughly until smooth.
Step 7
Grate the cheese and add it to the batter. You can use any kind of cheese you like: all hard and semi-hard cheeses will work, as well as mozzarella and even blue cheese. Mix again until smooth. If you wish, you can also add chopped fresh herbs to the batter: dill, parsley, cilantro, green onion, and so on.
Step 8
Dip small pieces of fish, meat, or vegetables into the batter so that it sticks tightly to the surface on all sides.
Step 9
Place the battered pieces into well-heated oil.

Fry until crisp.
