Udon Noodles with Chicken, Teriyaki Sauce and Vegetables

Preparation
Step 1
You can replace chicken with pork or beef. Vegetables can be chosen to your taste - zucchini, eggplant, etc.
Step 2
Peel onion, garlic, carrot, and ginger. Cut bell pepper in half, remove seeds and core. Rinse everything under cold water and pat dry with towels.
Step 3
Wash and pat dry the chicken breast. Cut into thin strips.
Step 4
Dice the onion finely, slice the bell pepper into thin strips, and grate the carrot with a Korean grater or cut into thin matchsticks by hand.
Step 5
Finely chop the ginger. Heat vegetable oil in a skillet and sauté ginger over medium heat for about 1 minute, stirring constantly so it doesn’t burn. A wok or a skillet with high sides works best.
Step 6
Add the chicken strips. Fry, stirring, for about 5 minutes.
Step 7
Meanwhile, cook the udon noodles according to the package instructions.
Step 8
Add onion to the skillet. Fry with chicken for another 1-2 minutes.
Step 9
Add the carrot. Cook for 2 minutes.
Step 10
Add bell pepper and fry for about 1 minute.
Step 11
Add minced garlic, soy sauce, and teriyaki sauce. Optionally, add chili pepper. Stir well, cover, and simmer on low heat for 1-2 minutes.
Step 12
Drain the cooked noodles in a colander. Add them to the skillet.
Step 13
Mix everything carefully but thoroughly. Cover and simmer together for 1 more minute. Taste and adjust seasoning if needed (salt, pepper, etc.).
Step 14
Sprinkle with fresh herbs and sesame seeds if desired. Serve hot!
