Preparation
Step 1
Prepare the needed ingredients. You can use any parts of turkey (breast/fillet, drumstick). Boil the turkey in salted water until done. Put the turkey into boiling water so the flavor and juiciness stay in the meat rather than going into the broth. Cool the cooked turkey, remove it from the bones, and cut into small pieces.
Step 2
Hard-boil the eggs. Cool them, then peel. Separate yolks from whites. Set aside one egg white for decorating the salad; grate the remaining whites on a fine grater. Grate the yolks finely as well. Finely chop the walnuts with a knife. Grate the cheese on a fine grater (you can also use processed cheese).
Step 3
Use a sweet-tart apple (for example, Granny Smith). Peel the apple, remove the core and seeds, and grate on a coarse grater.
Step 4
On a large plate, place the turkey, shaping it into a slightly oval form. Spread mayonnaise on top. Add the grated whites evenly and spread mayonnaise again. Add the apple, distributing it evenly over the whole salad. Next layer: grated cheese and mayonnaise. Add the yolks on top of the cheese layer. If needed, gently adjust the salad’s shape. Spread a thin layer of mayonnaise over the top.

Coat the salad on all sides with the chopped walnuts. Cut the reserved egg white into pieces to make the turtle’s head and legs. You can make the eyes from peppercorns. Refrigerate the salad. Let it soak for at least 1 hour.
Step 6
Before serving, decorate with parsley leaves. You can pipe a mayonnaise pattern on the “shell.” Enjoy your meal!
