Turkey Thigh Fillet in a Skillet

Step 1
How to pan-fry thigh fillet? Very simple. First, prepare the necessary ingredients. You can replace apple cider vinegar with regular table vinegar (6-9%). You can replace the spice mix with a store-bought blend for turkey or chicken dishes.
Step 2
Rinse the turkey fillet, pat dry, and cut into serving pieces. I cut large pieces that you can slice during the meal, but you can also cut the meat into smaller chunks.
Step 3
In a small bowl, combine olive oil, apple cider vinegar, sugar, salt, paprika, black pepper, hot pepper, and nutmeg. Whisk everything well with a fork or a whisk.
Step 4
Place the prepared turkey meat into a wide bowl or a dish where it will marinate.
Step 5
Pour the marinade over the turkey and mix so each piece is coated. Leave the meat to marinate for 30 minutes, stirring occasionally so the marinade distributes and absorbs evenly.
Step 6
Heat the skillet over high heat. I used a cast-iron grill pan to get nice grill marks on the meat. However, after adding the sauce during cooking, the marks became hard to see - so a regular thick-bottomed pan would work just as well. I didn’t add oil to the pan. Place the turkey pieces in the skillet and sear on one side until a browned crust appears.

Flip the meat and sear the other side until golden.
Step 8
When the pieces turn golden, pour the remaining turkey marinade into the pan. Cook, turning the pieces occasionally, until all excess moisture has evaporated. The marinade will keep the meat from drying out. As the marinade boils off, the turkey will finish cooking while staying tender, not dry or tough.
