Turkey Schnitzel in a Skillet

Preparation
Step 1
If needed, defrost the meat in advance. Use fine-ground cornmeal if possible. Wash and pat dry the raw egg and turkey meat with paper towels. You can also use chicken breast instead of turkey. Slice the turkey fillet into even pieces about ½ inch (1 cm) thick and lightly pound on both sides.

You’ll need three bowls. In the first bowl, crack one egg, add 2 tablespoons of water, and a pinch of salt.

Lightly whisk the egg mixture with a whisk or fork until smooth.

In the second bowl, mix wheat flour with paprika, ground black pepper, and salt.

Stir the dry mixture well. In the third bowl, add fine cornmeal.

Before starting this step, heat a skillet greased with vegetable oil over the stove. Dredge each turkey slice in the flour mixture, coating both sides.

Then dip the floured meat into the egg mixture.

Next, coat it in the cornmeal. Place the prepared schnitzel in the preheated skillet with oil. Repeat the process for each piece until the skillet is full (usually makes two servings).

Fry the schnitzels in vegetable oil until golden and crispy, about 5 minutes per side. Exact cooking time depends on your cookware, stove, and thickness of the meat.
