Turkey Patties with Zucchini

Preparation
Step 1
Use turkey breast or thigh. Chicken can be substituted. Use any vegetable oil suitable for frying. Butter should be at room temperature.

Wash, dry, and cut the turkey fillet into small pieces. Tender breast fillet works well.
Step 3
Grind the fillet in a meat grinder or blend in a food processor. You can also use store-bought ground turkey to save time.

Wash the zucchini and scrub it. Grate it finely with skin. Lightly salt and leave for 15 minutes to release moisture. Drain and lightly squeeze.
Step 5
Peel and finely dice the onion. To make it less noticeable, you can grind it with the meat. If so, you may need to thicken with flour or semolina. If your child dislikes onion, you can skip it.
Step 6
Wash, dry, and finely chop parsley. Optionally, use dill, cilantro, green onion, or a mix of herbs.

In a bowl, combine ground turkey, onion, and parsley. Add breadcrumbs and softened butter. Season with salt and pepper and mix well. Egg is not needed due to the tender turkey and juicy zucchini.
Step 8
Add the grated zucchini and mix again thoroughly.

Shape the mixture into evenly sized round patties. This recipe yields about 8 patties.

Heat vegetable oil in a skillet over medium heat. Fry patties on both sides until golden brown.
