Turkey in Pots with Potatoes

Tender turkey baked with veggies and potatoes in individual pots. Juicy, healthy, and perfect for a hearty dinner!

Advice
You can replace turkey with chicken or any other type of meat if you wish. However, keep in mind that cooking time and calorie content will change accordingly.
Preparation
Step 1
You can use fillet from any part of the bird. I used breast meat, which makes the dish leaner. If you use thigh fillet, the dish will be juicier and richer. Besides potatoes and onions, you can use any vegetables you like. I used carrots, bell pepper, and zucchini. Wash and pat dry all the vegetables. The given quantities make about 4 small pots.

Wash the meat and pat it dry. Cut it into small pieces.
Step 3
Peel the onion and slice it into quarter rings or dice it - it’s not essential which shape you choose.

Peel the carrot and cut it into rounds.
Step 5
Dice the flesh of the bell pepper.
Step 6
Also dice the zucchini. If it’s young, you don’t need to peel the very thin skin. If using more mature zucchini, peel off the tough skin and remove the seedy core.
Step 7
Peel the potatoes and cut them into cubes.
Step 8
Take ceramic pots. Put pieces of turkey on the bottom, then a layer of onion quarter rings. Sprinkle salt and pepper on top of these layers. You can also use any spices you like.
Step 9
Next, add a layer of carrots and bell pepper. Salt and pepper this layer as well.
Step 10
The next layers are zucchini and potatoes. Season them with salt and pepper too. Pour 50 ml (about 3.5 tbsp) of water into each pot and place a small piece of butter on top.
Step 11
Cover the pots with lids and place them on a baking tray - in case any liquid spills over during baking, it won’t dirty your oven. Bake the turkey with potatoes for 1 hour in an oven preheated to 180°C (about 350°F). Then take the pots out of the oven and stir the contents gently.
Step 12
Serve the dish portioned directly in the pots or transfer it to a plate. Enjoy your meal!
