Easy
About 20 min.
Preparation
Step 1
You can use a whole large turkey breast fillet and cut it into slices about 0.6 inches (1.5 cm) thick. Or buy pre-cut escalopes, which will speed up cooking. Besides the listed spices, feel free to add your own to taste.
Step 2
In a small bowl, mix paprika, dried garlic, salt, and pepper.
Step 3
Season the turkey on both sides with the spice mixture.
Step 4
Lightly pound the meat with a meat mallet on one side. Try not to tear the meat. I prefer pounding after adding spices, but you can do the reverse: pound first, season later.
Step 5
Heat both vegetable oil and butter in a skillet over medium heat. You can use only vegetable oil, but the butter–oil mix gives a delicate creamy flavor. Any frying oil works. If you have a grill pan, use it to add a beautiful pattern to the meat.
Step 6
Place the prepared escalopes in the skillet and fry for 3-4 minutes on one side.
Step 7
Once a golden crust appears, flip the fillets and fry for another about 3 minutes. Properly cooked escalopes should stay juicy. The meat should turn from pink to white, and when pierced with a knife, the juices should run clear.
Step 8
Serve the escalopes with a salad of fresh vegetables and greens or any garnish of your choice. Enjoy!
