Advice
You can replace turkey with chicken or any other type of meat of your choice. Just keep in mind that cooking time and calorie count will vary.
Preparation
Step 1
The size and weight of drumsticks depend on the age of the bird. I had 2 drumsticks, each weighing about 1.1 lbs (500 g). You can use one large drumstick weighing around 2.2 lbs (1 kg).
Step 2
Rinse the turkey drumsticks thoroughly under running water. Remove any leftover feathers if needed. Pat dry with paper towels.
Step 3
Wash the orange thoroughly and scrub it with a brush, as we’ll use it with the peel. Slice the orange into wedges.
Step 4
In a bowl, mix honey and soy sauce until smooth. Any honey will do—I used buckwheat honey.
Step 5
Place a skillet over medium heat. Add cumin, coriander, and khmeli-suneli seasoning. Stir and toast until the spices become aromatic. You can use a ready-made spice mix for turkey or chicken instead, but remember it likely already contains salt and pepper—so season cautiously.
Step 6
Pour in the beer. Use any kind you like—light or dark. I used dark beer.
Step 7
Place the turkey drumsticks into the skillet. Arrange the orange wedges around them. The skillet should be large enough to fit the drumsticks comfortably.
Step 8
Cover and simmer on medium heat until most of the beer has evaporated. Turn the drumsticks every 10 minutes to let them absorb the marinade evenly.
Step 9
Toward the end, brush the drumsticks all over with the soy-honey sauce and cook until a golden crust forms.
Step 10
Transfer the juicy turkey drumsticks to a serving plate, garnish with fresh herbs and orange slices, and serve. Enjoy your meal!
