Preparation
Step 1
If using frozen turkey fillet, thaw in the refrigerator on the bottom shelf. Choose spices and seasonings according to your taste. Olive oil can be replaced with any refined vegetable oil.
Step 2
Rinse the turkey fillet under cold water. Pat dry thoroughly to remove excess moisture. Cut the breast into 1/2-3/4 inch (1.5-2 cm) thick pieces.
Step 3
Lightly pound each piece with a meat mallet on both sides to tenderize the fibers. Cover with plastic wrap to keep your work surface clean and dry.
Step 4
Sprinkle each piece with salt and chosen spices on both sides. Massage well so the seasoning penetrates. I used khmeli-suneli; any spices can be used for flavor.
Step 5
Place all pieces in a bowl, drizzle with olive oil, leaving a bit to grease the skillet. Mix well and let marinate for 25-30 minutes. The fillet absorbs the oil and becomes juicier while spices release their aroma.
Step 6
Grease a skillet with a small amount of olive oil and heat over medium-high. Place turkey pieces in the skillet. Fry on one side until a golden crust forms, sealing the juices inside.
Step 7
Flip the fillet and fry the other side until golden. Reduce heat at the end to cook evenly through.
Step 8
Serve with any side dish, fresh or roasted vegetables. Enjoy your meal!
