Turkey Azu in a Pan
Tasty, quick, and simple, inspired by Tatar cuisine! Turkey azu in a pan is perfect for a family lunch or dinner. It is prepared the same way as the traditional dish, except for the meat: instead of beef or lamb meat, turkey is used. Pork or chicken can also be used instead of turkey.

Step 1
How do you cook turkey azu? Prepare everything you need. You can use any turkey meat: thigh fillet or breast fillet. In addition to tomato paste, you can also add 1 fresh tomato. Remove its skin by making a cross-shaped cut on the peel and lowering it into boiling water for 10-15 seconds. After that, the loosened skin will come off easily, and the flesh can either be cut into strips or grated on a fine grater into a purée.
Step 2
Wash the turkey fillet, dry it, and cut it into strips. One of the distinguishing features of azu compared with similar dishes is that all the ingredients are cut into strips. The strips of meat, potatoes, and cucumbers should be about the same size.
Step 3
Peel the potatoes and cut them into strips as well. For this dish, choose potatoes that are not too starchy, because starchy varieties will quickly fall apart during stewing, while we need the potatoes to keep their shape. Potatoes with yellowish flesh are well suited for this. The whiter the flesh, the more starch it contains.
Step 4
Cut the pickled cucumbers into strips. The cucumbers should be firm and crunchy. If you do not have pickled cucumbers on hand, you can replace them with marinated cucumbers.
Step 5
Heat the vegetable oil in a deep frying pan over high heat. Add the turkey and fry the fillet, stirring occasionally, until a golden crust appears. Frying over high heat quickly seals in all the juices and prevents the meat from drying out.
Step 6
Add the tomato paste to the pan, and the fresh tomato as well if you decided to use it. Cook together with the poultry, stirring, for about 5 minutes.
Step 7
Add the cut cucumbers and potatoes. Mix everything together.
Step 8
Add salt and pepper. Pour hot water and cucumber brine into the pan. Mix everything gently again.
Step 9
Cover the pan with a lid and stew over low heat for about 20 minutes, until the meat and vegetables are cooked through.
Step 10
Arrange the finished turkey azu on plates and serve. No additional side dish is needed for this meal, because it already combines meat and vegetables. Enjoy your meal!
