Tuna melt

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
In a bowl, combine flaked tuna with both red and spring onions, grated cheddar, mayonnaise, lemon juice, and a generous amount of freshly ground black pepper, plus a small pinch of salt. Mix everything until well combined.
Step 2
Spoon the tuna mixture between two slices of bread and press together, then butter the outsides of the sandwich. Heat a little oil in a frying pan over low heat.
Step 3
Place the sandwich in the pan and use a small saucepan with a tin or similar weight inside to press it down firmly.
Step 4
Cook for 4-5 minutes, or until the bottom is crisp and golden and the filling begins to melt. Flip the sandwich and repeat on the other side.
Step 5
If the toastie is golden but the filling hasn’t fully melted, you can microwave it for about a minute to finish.
Step 6
Serve hot and enjoy immediately.
