Easy
More than 1 hour.
Preparation
Step 1
Start by making the sponge cake. Use premium flour. If you prefer, make trifles with white sponge by replacing cocoa with the same amount of flour.
Step 2
Separate the eggs into yolks and whites. Make sure no yolk gets into the whites, otherwise they won’t whip. Beat the whites with sugar until fluffy.
Step 3
Without stopping whipping, add the yolks one at a time. You’ll get an airy mass.
Step 4
Sift the flour with cocoa and gradually fold it into the batter, mixing gently with a spatula.
Step 5
Line a 12×16 inch (30×40 cm) baking sheet with parchment, lightly grease with oil. Pour in the batter and spread evenly. Bake in a preheated oven at 350°F (180°C) for about 10 minutes. Do not overdry. Let the cake cool completely.
Step 6
Cut out 8 circles from the sponge using a glass. They should fit inside the serving cups.
Step 7
Place the leftover sponge pieces in a blender and grind into crumbs.
Step 8
For the filling, use fragrant ripe strawberries. You may substitute or add other fruits and berries.
Step 9
Wash, dry, and hull the strawberries. Cut large ones into quarters, medium in half, and leave small ones whole.
Step 10
For the cream, you can use store-bought whipped cream or make your own. Other creams will also work.
Step 11
Beat cold cream with powdered sugar until stiff peaks form.
Step 12
Layer: place a sponge circle at the bottom of each glass, top with strawberries, then whipped cream. Cover with another sponge circle and repeat. Finish with sponge crumbs. Chill for 1-2 hours.
Step 13
Before serving, decorate with strawberries and mint. Enjoy!
