Tomatoes with Parsley for Winter

The listed ingredients are for one 1-liter jar. If using 2- or 3-liter jars, increase all quantities proportionally.
Preparation
Step 1
It's best to use seasonal, meaty tomatoes with thick skins.
Step 2
To determine the exact amount of tomatoes needed, fill an empty jar completely with them first.
Step 3
Wash the tomatoes and parsley. Peel and rinse the garlic. Adjust the amount of garlic and parsley to your taste.
Step 4
Wash and rinse the jars and lids thoroughly. Sterilize them using your preferred method. Place part of the parsley and chopped garlic (cut into 2-4 pieces) at the bottom of the jar. Add a few allspice or black peppercorns and cloves.
Step 5
Add the tomatoes and the remaining parsley to the jar.
Step 6
Pour boiling water into the jar to the top, cover loosely with lids, and let it sit for 15-20 minutes. Then, pour the water into a pot and bring it to a boil.
Step 7
Refill the jar with the newly boiled water, cover again, and let it sit for another 20 minutes.
Step 8
Drain the water into the pot again and bring it to a boil for the third time.
Step 9
Add salt, sugar, and vinegar directly into the jar. Fill the jar to the top with the freshly boiled water and seal it tightly with a lid. Turn the jar upside down and wrap it in a warm blanket or towel. Let it cool completely, then store it in a cool, dark place.
