Tomatoes with Cheese and Garlic in the Oven

Preparation
Step 1
Use cheese that holds its shape and doesn’t spread under high heat. Parmesan, low-moisture mozzarella, or another semi-dry cheese works well. I used Parmesan.
Step 2
Wash and dry the tomatoes, then slice them into moderately thick rounds. Use ripe but firm tomatoes; soft ones will collapse. Plum and pink tomatoes are ideal - they’re sweet and aromatic.
Step 3
Grate the cheese on a medium grater.
Step 4
In a bowl, mix mayonnaise with pressed garlic. Fresh garlic can be substituted with ½ tsp of dry garlic.
Step 5
Wash, dry, and finely chop dill. Optionally, replace or complement with other herbs like parsley, cilantro, green onions, or a mix.
Step 6
Place tomato slices on a parchment-lined baking sheet. If using regular parchment, lightly oil it to prevent sticking. Season the tomatoes with salt and pepper.

Spread mayonnaise-garlic mixture on each tomato slice.
Step 8
Heap grated cheese on top. Place in a preheated 180°C (356°F) oven under the grill and bake 5-7 minutes until the cheese is golden.
Step 9
Sprinkle the baked tomatoes with chopped dill.

Transfer the hot appetizer to a plate and serve immediately. Enjoy!
