Tomatoes with Cabbage for Winter

Preparation
Step 1
Prepare all necessary ingredients. Choose small, firm tomatoes with thick skin. The weight of tomatoes and cabbage may slightly vary depending on the volume and shape of the jars.
Step 2
Remove the outer leaves from the cabbage. Rinse the head under running water and slice it into medium-sized strips. Wash the tomatoes. Peel the garlic.
Step 3
Wash and sterilize jars and lids using any available method. Place a sprig or umbel of dill and a few garlic cloves at the bottom of each jar.
Step 4
Add black peppercorns and a bay leaf.

First, add a layer of cabbage.
Step 6
Then, place a layer of tomatoes.
Step 7
Add another layer of cabbage. If there is space left in the jar, repeat the layers of tomatoes and cabbage. On average, for a 1.5-liter jar, I used about 300-350g of tomatoes and 300-350g of cabbage.

Pour boiling water into the jars up to the brim.
Step 9
Cover the jars with lids and let them sit for 20 minutes.
Step 10
Drain the water from the jars into a separate pot or saucepan and bring it to a boil. I got about 1 liter of water from two jars.
Step 11
Refill the jars with boiling water and let them sit for another 20 minutes.
Step 12
Drain the liquid again into a pot and bring it to a boil.
Step 13
Add salt and sugar to each jar, then pour in vinegar. For one jar, I used 1 heaping tbsp of salt, 2 tbsp of sugar, and 1 tbsp of vinegar.
Step 14
Pour the boiling water from the pot over the tomatoes and cabbage, then seal the jars with lids. Turn them upside down and wrap them in a warm blanket.
Step 15
Leave the jars to cool completely, then store them in a cellar or pantry.
