Tomato Sauce for BBQ

Step 1
Prepare all the necessary ingredients.

Put the tomato paste into a deep bowl and mix it with clean bottled or boiled cooled water. How much water to use? Aim for a consistency similar to low-fat sour cream. I had thick paste, and I needed one cup of water. In the end, I got 500 ml of tomato sauce. If you have thin tomato paste, exclude the water from the ingredients list and increase the paste amount to 500 ml.
Step 3
Peel the onion, wash it, and cut it into small cubes. Pour vinegar (I have 6%) into a small deep dish and let the onion marinate for 15-20 minutes. If you have 9% vinegar, you will need less, or you can dilute it slightly with water.

In the meantime, prepare the other ingredients. Peel the garlic, rinse it, and grate it on a fine grater. Alternatively, you can press the garlic cloves through a garlic press. Thoroughly rinse the herbs and dry them with paper towels to remove any excess water. Put the tomato sauce, garlic, and marinated onion into a blender.
Step 5
Add salt to taste, a pinch of sugar (to balance the flavor), and ground black pepper.
Step 6
Finely chop the cilantro and parsley, and add them to the blender with all the other ingredients.

Blend everything until smooth.
Step 8
Transfer the sauce to a small bowl and taste it. If needed, add a little more sugar and salt. Cover with a lid or plastic wrap and refrigerate for at least an hour to let it infuse.

The aromatic and most delicious tomato sauce is ready. Serve it!
