Preparation
Step 1
Prepare the ingredients. Choose plain tomato paste made only from tomatoes, without added seasonings. You can replace the olive oil with a neutral vegetable oil, although olive oil will give the sauce a richer flavor. Besides basil, you can add oregano, Italian seasoning or other herbs you enjoy.
Step 2
Peel the garlic and cut it into thin slices.
Step 3
Peel the onion and chop it very finely.
Step 4
Heat the olive oil in a heavy-bottomed saucepan or nonstick frying pan. Add the garlic and cook over medium-low heat for 1 minute to flavor the oil. Turn the garlic slices a few times so they do not burn, then remove them from the pan.
Step 5
Add the chopped onion and cook over low heat, stirring occasionally, until golden.
Step 6
Add the tomato paste and mix well. Cook over low heat for 1 minute.
Step 7
Pour in the water and stir until smooth.
Step 8
Add the salt, sugar, dried basil and any other desired seasonings. Stir and taste, adjusting the seasoning if necessary. Bring the sauce to a gentle boil.
Step 9
Simmer over low heat for 5–7 minutes, stirring occasionally, until slightly thickened. Remove from the heat, cover and leave to rest for 15 minutes. Do not cook the sauce for too long, as it will thicken further while cooling.
Step 10
Use the finished tomato sauce to prepare your pizza.
