Tomato and pesto sandwich

Step 1
Spread the pesto evenly over the bread, then layer cheese and tomato slices on one piece. Season with freshly ground black pepper and place the second slice of bread on top to form a sandwich.
Step 2
Heat the oil in a large non-stick frying pan and carefully lower the sandwich in with a spatula. Cook over low–medium heat for 3 minutes, or until the bottom is golden and the cheese begins to melt. Flip the sandwich and cook for another 2-3 minutes until both sides are crisp and the cheese is fully melted.
Step 3
Remove from the pan, slice in half, and serve hot alongside a fresh salad.
