Tomato and feta bruschetta

Crisp grilled ciabatta topped with a fresh and zesty Greek salad of cherry tomatoes, olives, feta, and lemon dressing. A quick and vibrant Mediterranean-inspired appetizer or light meal.

Preparation
Step 1
It is best to use ciabatta bread for the appetizer. Shallot can be replaced with red onion.

In a bowl, whisk together the olive oil and lemon juice to create a light dressing.

Add the cherry tomatoes, shallot, olives, and feta, then season with salt and freshly ground black pepper. Gently toss to combine.

For the bruschetta, heat a griddle pan until smoking hot. Drizzle the ciabatta slices with olive oil and season both sides with salt and pepper. Grill for 1 minute on each side, until crisp and marked with grill lines.
Step 5
To serve, arrange the bruschetta slices in the center of a plate and generously spoon the salad on top.
