Tofu scramble

Preparation
Step 1
Heat a tablespoon of oil in a medium frying pan. In a large bowl, mash the tofu with a fork or potato masher until it breaks into small, uneven pieces. Add the tofu to the hot pan.
Step 2
Stir in the spring onions, spinach, turmeric, a generous pinch of sea salt, and plenty of black pepper.
Step 3
Cook over medium heat for 4-5 minutes, stirring constantly, until the tofu turns golden yellow, soft, and slightly flaky.
Step 4
Drizzle the remaining oil over slices of bread, then spoon the tofu mixture on top. Serve warm.
