Tofu croquettes

Preparation
Step 1
Using your hands, combine all the croquette ingredients until a soft dough forms. Mix in just enough flour to help the dough hold its shape, then season to taste with thyme, salt, and pepper.
Step 2
Shape the dough into 12 even patties and gently flatten each one. Shallow-fry the patties in batches over medium heat for 5 minutes on each side, turning carefully to avoid breaking.
Step 3
Once cooked, arrange the croquettes in a small ovenproof dish if you plan to reheat them later in the oven - they may lose some crispness, but they’ll remain just as flavorful.
Step 4
To freeze, allow them to cool completely, then cover and store in the freezer.
