Thin Kefir Pancakes with Boiling Water
Unbelievably tasty, very simple and budget-friendly, for every day! Thin pancakes with kefir and boiling water have a “secret” ingredient that keeps them from tearing. You can serve them at any time of day, with different gravies, sauces, and fillings - sweet or savory, dessert-style or as a snack.

Preparation
Step 1
How do you make pancakes with kefir and boiling water? Prepare the ingredients. Take the kefir out of the fridge in advance so it comes to room temperature. Use a large bowl, crack in the eggs, add sugar, and lightly whisk.

Then add a little vegetable oil, a pinch of salt, and the kefir. Mix.
Step 3
Sift the flour into the bowl and whisk so there are no lumps. Add baking soda and mix again.

Then pour in boiling water in a thin stream (this is important!), whisking quickly as you do. When you add boiling water, the flour in the batter gets “scalded,” making the batter more elastic. Watch the consistency - don’t pour in all the water at once.
Step 5
The finished batter should be quite runny so it spreads easily in the pan. Use that as your guide, not the exact amount of flour or liquid.

Heat a crêpe/pancake skillet until very hot. Before the first pancake, lightly grease it with oil. Pour a little batter into the skillet and quickly spread it over the surface. Cook over medium heat for about 1 minute per side, until golden.
Step 7
Place the finished pancakes on a large plate and cover with a lid so they don’t dry out. When all the pancakes are done, flip the whole stack over—the bottom ones will steam and become soft and tasty. Serve with jam, sour cream, or sweetened condensed milk. Enjoy!
