Thin Eggless Pancakes Made with Water

Preparation
Step 1
Prepare the ingredients. Boil the water in advance and leave it to cool until warm, as it will combine with the flour more easily. Adjust the amounts of sugar and salt to your taste.

Sift the flour. Sifting aerates the flour and helps make the pancakes lighter.

Add the salt, sugar and baking soda to the sifted flour. Mix thoroughly with a whisk. You may need slightly more or less flour, so adjust the amount according to the consistency of the batter.
Step 4
Gradually pour the water into the flour in small portions. Adding the liquid to the flour in this way helps prevent lumps from forming. Whisk the batter thoroughly after each addition of water. You can use an electric mixer, although a hand whisk works just as well. The finished batter should have the consistency of pourable sour cream. If it is too thick, add a little more water. Leave the batter to rest for 15–20 minutes.
Step 5
Add the vegetable oil to the batter. It will improve the flavor of the pancakes and help prevent them from sticking to the pan. Mix well.
Step 6
Heat a frying pan thoroughly. A cast-iron pan or a heavy-bottomed crepe pan works best. If using a nonstick crepe pan, you may not need to grease it. If using a regular frying pan, lightly grease it with oil before cooking the first pancake. Pour about half a ladleful of batter into the pan and quickly tilt the pan in a circular motion to spread it evenly over the bottom. Use only a small amount of batter so the pancakes remain thin.
Step 7
Cook the pancakes on both sides until golden, about 2 minutes per side.
Step 8
Stack the cooked pancakes on a plate. Serve hot.
