Preparation
Step 1
Preheat the oven to 180C/350F.
Step 2
Blend the marinade ingredients in a food processor until smooth, then brush generously over the chicken to coat.
Step 3
Place the chicken in a roasting tray, cover with foil, and roast for 70-80 minutes, or until the juices run clear when pierced with a skewer. Remove the foil halfway through cooking to allow the skin to crisp and brown.
Step 4
Once cooked, let the chicken rest under foil for 15 minutes before carving and serving.
