Tender Kefir Pancakes without Eggs

Step 1
Making pancakes without eggs is a great way to use leftover kefir that’s no longer fresh. It’s even better if you leave it at room temperature for a few hours so it sours more and produces lactic acid, which makes the pancakes fluffy.

In a bowl, sift in wheat flour, then add sugar, salt, and baking soda. Adjust sugar to taste depending on what you’ll serve the pancakes with. They are usually served with sweet toppings like jam, condensed milk, or preserves, so this amount of sugar is just right.

Mix the dry ingredients well. Add room-temperature kefir to the dry ingredients. Stir with a spoon, whisk, or hand mixer until no lumps remain. Leave the batter at room temperature for 15 minutes to rest and to release more carbon dioxide from the reaction between soda and kefir.

After resting, stir the batter again. The consistency should be very thick, almost like country-style sour cream. Heat vegetable oil in a heavy-bottomed skillet until well hot.

Scoop the batter with a tablespoon (about one spoonful per pancake) and place onto the hot oil. Fill the skillet with pancakes. Once the batter sets, reduce the heat to medium. Let the pancakes cook on one side. When bubbles appear on top, it’s time to flip them.

Flip the pancakes and fry for another 2 minutes on the second side until golden brown. Cover the skillet with a lid so they cook through inside. Transfer to a plate lined with paper towels to absorb excess oil.
Step 7
Serve the pancakes with tea, coffee, or milk, along with sour cream, jam, preserves, or fresh berries. This version is perfect for those with egg intolerance. They taste just as good as regular pancakes, if not softer and fluffier. Enjoy!
