Preparation
Step 1
How do you make triangles with meat and potatoes in the oven? Prepare all the necessary ingredients. Warm the milk until it is lukewarm, no higher than 40°C (104°F). This is important: the milk must not be hot, otherwise the yeast will die and the dough will not rise. Add the yeast and sugar to the milk, stir, and place it in a warm spot for 15 minutes.
Step 2
Break the eggs into a bowl, mine were size C1, whisk them, add the vegetable oil and the melted butter cooled to room temperature, then mix.
Step 3
A foamy cap should appear on the surface of the starter, which means the yeast is active. If this does not happen, use different yeast, because the pastry will not work with this one. Sift three-quarters of the flour into a deep, large bowl. Add the salt to the flour, make a well, pour in the starter and the egg-and-butter mixture, and gently begin mixing the dough with a whisk, gradually incorporating the flour from the edges.
Step 4
Then dust the countertop with the remaining flour, transfer the dough onto it, and continue kneading by hand. Knead the dough well. It should turn out soft and airy and will stick to your hands a little. Transfer it to a bowl, cover with a towel, and place it in a warm spot for 1 to 1 1/2 hours. Do not overload the dough with flour. Too much flour will make the dough stiff and heavy.
Step 5
While the dough is rising, prepare the filling. Peel the onion and potatoes, rinse them, chop them finely, and transfer them to a bowl. Trim the chicken fillet of sinew and bones, chop it finely as well, and add it to the bowl. Add the softened butter, salt, and pepper, then mix. If desired, add any other spices you like.
Step 6
Transfer the risen dough to a floured countertop, punch it down, divide it into 12 parts, roll each one into a circle, and place 1 1/2 tablespoons of filling on each.
Step 7
Shape a triangle: first pinch together the left edge.
Step 8
Then pinch together the top and right edges. Shape all 12 triangles this way, carefully transfer them to a baking sheet greased with vegetable oil, and bake in an oven preheated to 180°C (350°F) for 30 to 40 minutes, until golden brown. I baked mine for 30 minutes. Brush the finished triangular pies with chicken and potatoes with butter.
