Tatar Potato Pie (Belish)
A famous Tatar savory bake! Potato belish is affordable and easy to make. Traditionally, the pie is served by cutting off the top. The filling is spooned onto plates and eaten with golden crust pieces. Try this aromatic, tasty belish!

Preparation
Step 1
How do you make potato belish? Start with the dough. Use neutral (odorless) vegetable oil. Warm the water well. It’s best to use good-quality all-purpose wheat flour.
Step 2
Sift the flour through a sieve. Use a wide, convenient bowl so the flour doesn’t spill onto the table.
Step 3
Dissolve the salt in warm water, pour in the vegetable oil, and mix.
Step 4
Add the sifted flour. Don’t add it all at once - you may need less. Stir the dough with a spoon first.
Step 5
If the dough is too runny, add a little more flour.
Step 6
Knead the dough by hand. It should turn out soft, elastic, and slightly oily, and it shouldn’t stick to your hands. Wrap it in a bag or plastic wrap and leave on the counter for 30 minutes. During this time the gluten relaxes and the dough becomes more pliable.
Step 7
Meanwhile, prepare the filling. You can use ground coriander or crushed coriander. Choose spices to your taste.

Finely dice the peeled onion.
Step 9
Scrub the potatoes under running water, peel them, and dice into small cubes.
Step 10
Combine the potatoes and onion, salt, add spices, and mix.
Step 11
Divide the dough into portions: one for the base, one for the top, a little for decoration, and a small ball to plug the steam hole.
Step 12
Roll the largest portion into a round large enough to cover the sides of the pan (my pan is 20 cm / about 8 in). Gently press the dough over the bottom and up the sides. You don’t need to grease the pan - the dough contains enough oil.

Add the filling and level it out.

Spread pieces of butter over the top.
Step 15
Roll out the smaller dough portion and cover the pie. Seal the edges well.
Step 16
Make a hole in the center for steam to escape.
Step 17
Close the hole with the small dough ball. Use the remaining dough to decorate the pie.

Bake in a preheated oven at 180°C / 356°F for 20-25 minutes. Then carefully remove the pie, open the hole, and pour in broth to make the filling juicier. If the pie is already nicely browned, cover it with foil.
Step 19
Return the pie to the oven and continue baking until the filling is done, about 25-30 minutes more. Let the finished pie rest in the pan for 15 minutes, wrapped in a warm towel, so the crust softens slightly.

Then remove from the pan and serve the hot belish. Enjoy your meal!
