Tartlets with Avocado, Red Fish & Cream Cheese

Step 1
This recipe uses store-bought tartlets, but you can make your own if you prefer.

Wash and dry the avocado. Cut it in half and twist to separate. Remove the pit and scoop out the flesh with a spoon. Choose a soft, ripe avocado - hard ones don’t blend well. If your avocado is unripe, place it in a paper bag with an apple for a couple of days to soften.
Step 3
Place the avocado flesh in a blender cup. Drizzle with lemon juice to prevent browning. Wash and dry fresh herbs (like dill or parsley) and add them to the blender.
Step 4
Blend avocado and herbs until smooth and creamy.
Step 5
Add cream cheese (choose one made without vegetable fats). Blend again until you get a uniform, silky mixture.
Step 6
Slice the red fish (salmon or trout) into thin pieces if not pre-sliced. Cut small lemon wedges for garnish.
Step 7
Transfer the avocado cream into a piping bag. Pipe it into the tartlets (you can also spoon it in if you prefer).
Step 8
Roll fish slices into rose-like shapes and place them on top of the cream.
Step 9
Decorate the tartlets with lemon wedges and parsley leaves. You can also add cucumber slices, olives, or capers.
Step 10
Chill slightly before serving if desired - the cream will firm up. Or serve immediately for a softer texture. Enjoy!
