Tabbouleh

A light, fresh, and herby tabbouleh salad made with bulgur wheat, ripe tomatoes, and zesty lemon - perfect as a side or a vibrant vegetarian main served with grilled flatbread.

Preparation
Step 1
Soak the bulgur wheat in boiling water and let it sit until fully absorbed.

Meanwhile, blanch and peel the tomatoes, then deseed and finely dice them.

Combine the diced tomatoes with chopped parsley, mint, and onion.
Step 4
Fluff the bulgur with a fork and mix it into the tomato and herb mixture. Drizzle with lemon juice and olive oil, season to taste, and toss to coat.
Step 5
Serve the tabbouleh chilled or at room temperature, paired with warm grilled flatbread for a refreshing and satisfying dish.
