Step 1
Start by combining sweetcorn and finely chopped spring onions in a mixing bowl.

Whisk together eggs and milk, then pour over the vegetables and mix thoroughly.

Season well, then fold in sifted flour spiced with a touch of cayenne for a subtle kick.
Step 4
Heat enough oil in a frying pan to shallow-fry. Once hot, drop spoonfuls of the batter into the pan, cooking a few fritters at a time.
Step 5
Fry until golden on one side, flip, and cook the other side until crisp and cooked through. Drain on kitchen paper and keep warm in a low oven until all are ready to serve.
