Sweet Yeast Pies with Kefir and Cherry Filling

Preparation
Step 1
First, prepare all the necessary room-temperature ingredients for making homemade sweet yeast pies with cherry filling.
Step 2
For the dough, take a large bowl and pour in 1 cup (250 ml) of warm kefir. Add 1 egg and the white of a second egg, then whisk until smooth.
Step 3
In a separate bowl, sift 4 cups (500 g) of all-purpose flour. Add 1/3 tsp salt, 1/4 cup (50 g) sugar, 1 tsp baking powder, 1 tsp vanilla sugar, 2 tsp instant dry yeast, and mix.
Step 4
Add the dry ingredients into the kefir mixture in two parts, mixing well each time, then knead into dough.
Step 5
Knead by hand for 5 minutes, then add 3 tbsp (40 g) softened butter. Continue kneading another 5 minutes until smooth.
Step 6
Grease the dough with 1 tbsp vegetable oil, cover with a towel, and leave in a warm place for 1 hour to rise.
Step 7
For the filling, place about 2 ½ cups (500 g) frozen cherries in a skillet. Add 1/2 cup (100 g) sugar and 1 ½ tbsp (20 g) butter. Heat for 2 minutes on medium until sugar melts.
Step 8
In a small bowl, mix 2 tbsp (25 g) starch with 3 tbsp cherry juice. Then stir into 2/3 cup (150 ml) more cherry juice. Pour this mixture into the skillet and cook, stirring, until thick. Let the filling cool.
Step 9
Grease your hands and work surface with 1 tbsp vegetable oil. Place the risen dough on the table, divide into 15 balls, and cover with a towel.
Step 10
Flatten each ball into a disk, place some cherry filling inside, and pinch the edges to seal. Place pies on a parchment-lined baking sheet, leaving space between them. Cover with a towel and let rise.
Step 11
Roll out leftover dough, dusting the table with flour, into a sheet about 1/5 inch (5 mm) thick. Cut out small cherry-shaped decorations.
Step 12
Place a couple of cherry-shaped cutouts on each risen pie.
Step 13
Roll the remaining dough into a thin sheet about 1/12 inch (2 mm) thick. Cut into thin strips and use them to decorate pies as cherry stems.
Step 14
Preheat oven to 350°F (175°C).
Step 15
Bake pies for 15-20 minutes. 5 minutes before they’re ready, brush with a beaten yolk mixed with 2 tbsp warm milk.
