Sweet Yeast Dough Buns

Fragrant, soft, golden, and cozy—just like grandma's! These baked yeast buns are not only visually appealing but also delicious. You can make them with sweet fillings like jam, fruit, or berries, or opt for savory options like potatoes, mushrooms, or meat.

Preparation
Step 1
Prepare all the necessary ingredients. The filling for these pies can be made from any fruits or berries. The milk should be warm but not hot.
Step 2
To make the dough, mix warm milk (95–100°F) with salt, sugar, and yeast. Ensure the milk is warm but not too hot; otherwise, the yeast will die.
Step 3
Stir in 1/3 of the flour and let it sit for a while until bubbles appear on the surface, indicating that the yeast has started working.
Step 4
Next, add melted (but not hot!) butter and eggs to the dough.

Gradually add sifted flour and knead the dough. You may need slightly more or less flour than the recipe states, so adjust based on the dough’s consistency.
Step 6
The dough should be soft and not stick to your hands. Place it in a bowl, cover with a towel, and let it rise in a warm place for 1 hour.
Step 7
Meanwhile, prepare the fillings for the sweet yeast pies. For berry filling, take 7 oz (200 g) of frozen cherries and lingonberries. Let them thaw slightly until they release juice. Mix with 3.5 oz (100 g) of sugar and 1 tbsp of cornstarch. Heat in a saucepan. If using fresh cherries, remove the pits and slightly mash the berries to release juice.
Step 8
Stir constantly and bring the filling to a boil. If you prefer a smoother filling, blend it with an immersion blender. It will thicken as it heats. Let the filling cool completely.
Step 9
You can also make a fruit filling. I use apples, but you can choose pears, apricots, or plums. Core the apples and cut them into cubes.
Step 10
Melt butter in a pan, add sugar, and cook the apples for 5–7 minutes to remove excess moisture. Let the filling cool.
Step 11
Punch down the risen dough and divide it into pieces. Smaller pieces will yield more pies, but they will be smaller.
Step 12
Place the prepared fillings onto flattened pieces of dough. Pinch the edges together to form pies.
Step 13
Line a baking sheet with parchment paper and place the pies on it. Let them rest for 10–15 minutes. Then brush the tops with egg yolk and bake in a preheated oven at 350°F (180°C) for 20–30 minutes. Baking time may vary depending on your oven.
Step 14
The finished pies will slightly increase in size and turn golden and fragrant. Remove them from the oven and let them cool slightly. Enjoy!
