Sweet Yeast Buns with Jam and Streusel Crumbs

Preparation
Step 1
To make the tastiest sweet buns with streusel pastry crumbs, prepare the necessary products.
Step 2
Pour 250 ml room-temperature milk (about 1 cup + 1 Tbsp) into a measuring cup, then add 50 g sugar (about 1/4 cup).
Step 3
Add 1 tsp instant dry yeast.
Step 4
Add 3 Tbsp wheat flour.
Step 5
Mix everything well in the cup, then place it in a warm spot to activate the yeast for 15 minutes.
Step 6
Crack 1 egg into a large bowl, then add salt to taste.
Step 7
Add 1 tsp vanilla sugar.
Step 8
Pour in 50 g melted butter (about 3 1/2 Tbsp) and mix everything well.
Step 9
Pour the activated yeast sponge into the egg-butter mixture and mix until smooth.
Step 10
Sift in 425 g wheat flour (about 3 1/2 cups) in parts and add 1 tsp baking powder.
Step 11
Stir clockwise and knead the dough, then continue kneading by hand for 7 minutes.

Gather the dough into a ball.

Put the dough in a bowl, brush it with a little vegetable oil, cover with a towel, and let rise in a warm place for 40 minutes.

After the time is up, place the dough on the table, punch it down, and shape it.

Divide the dough into 10 equal pieces, roll them into balls, and place them on the table.

Grease the bottom of a suitable glass with vegetable oil and press it onto each ball, then twist the glass slightly.

Make small cuts on each dough piece with a knife and place them on a baking sheet lined with parchment paper.

Put 1 tsp jam or fruit preserve (to taste) in the center of each piece and let rise in a warm place for 20 minutes.

Start making the streusel crumbs: in a small bowl, combine 1 Tbsp flour, 2 tsp sugar, and 2 tsp softened butter. Mix well, then put the bowl in the freezer.

After the time is up, brush the risen buns with beaten egg yolk mixed with 2 Tbsp milk.

Sprinkle the buns with the prepared streusel crumbs and place the baking sheet in an oven preheated to 170°C (338°F) to bake.

After 20 minutes, remove the baking sheet from the oven and transfer the buns to a plate.
