Sweet Yeast Buns Baked in the Oven

Fluffy, tender sweet bread rolls made from yeast dough using water. A budget-friendly recipe whose shaping even a child can handle. Top them with poppy seeds, nuts, or cinnamon sugar to vary their taste and look.

Preparation
Step 1
First, make the starter. Measure its ingredients. Warm the water slightly. Dry yeast can be replaced with fresh pressed yeast.

In a suitably sized bowl, dissolve yeast and sugar in warm water.

Sift flour into the yeast water - sifting adds oxygen and helps the starter rise.
Step 4
Whisk until smooth with no lumps. Cover and leave in a warm place to rise for 20 minutes.

Measure the remaining ingredients for the dough.

Sift flour into a wide deep bowl to oxygenate and remove impurities - bread will be fluffier.

Melt butter gently until just soft, not overheated.

The sponge has risen: bubbles and volume increase show active yeast.

In a large bowl, whisk together egg, sugar, salt and vanilla sugar (or vanilla).

Add the risen starter to the egg mixture and mix.

Add melted butter and mix.

Gradually add sifted flour - don't dump it all at once. Start mixing with a spoon.

The dough will be sticky - gradually add the rest of the flour by hand, keeping an eye on texture. Too much flour makes stiff buns.

Knead a soft, pliable, non‑sticky dough. Cover and let rise in a warm place for 70–80 minutes (depends on room temperature and yeast activity).

Dough should expand about 2.5×. Preheat oven to 180°C (356°F).

Gently deflate dough, flour the surface, and divide into equal parts.

To shape, roll each piece into a rope.

Tie the rope into a knot.

Tuck the ends underneath for a neat bun shape.

Place buns on parchment-lined tray, spaced apart. Cover and let proof 15–20 minutes.

For brushing - beat egg with milk until smooth.

Once risen, brush tops with egg wash.

Sprinkle poppy seeds on top.

Bake in preheated oven at 180 °C for about 20-25 minutes until golden. Adjust timing per your oven.
