Sweet Rice Pie with Dried Apricots and Raisins
Beautiful, delicious and wonderfully filling, this sweet rice pie is suitable for holidays or everyday meals. The combination of rice, dried apricots and raisins resembles sweet pilaf wrapped in tender pastry. It is delicious both warm and chilled.

Preparation
Step 1
Prepare all the ingredients, beginning with the dough. Bring the butter to room temperature beforehand.
Step 2
Combine the sifted flour, softened butter, sour cream, sugar, baking soda and salt in a bowl.
Step 3
Knead into a soft, elastic dough, adding a little more flour if necessary. At first the dough may stick strongly to your hands, but it should soon begin to pull away from both your hands and the sides of the bowl.
Step 4
Shape the dough into a ball, wrap it in plastic wrap and refrigerate for 30 minutes.
Step 5
Meanwhile, prepare the filling. In addition to dried apricots and raisins, you can add prunes or chopped nuts.
Step 6
Cook the rice in plenty of boiling water until tender, approximately 15 minutes, or according to the package instructions. Drain it in a colander and leave until all the water has run off.
Step 7
Rinse the raisins and dried apricots, cover them with boiling water and leave for 10 minutes. Drain and pat the dried fruit dry.
Step 8
Cut the dried apricots into small pieces.
Step 9
Melt the butter and leave it to cool.
Step 10
Combine the fluffy cooked rice, dried apricots, raisins, sugar and melted butter in a bowl. Mix thoroughly.

Prepare the crumb topping.
Step 12
Place the flour, cold diced butter and sugar in a blender and pulse until coarse crumbs form. Alternatively, rub the ingredients together by hand.
Step 13
Divide the chilled dough into two unequal portions. Roll the larger portion into a circle.

Fit the rolled dough into an 8-inch round baking pan and form high sides. Spoon in the filling and spread it evenly.

Roll the remaining dough into a circle the same diameter as the pan and place it over the filling. Pinch the edges firmly to seal and make a round opening in the center for steam to escape.

Sprinkle the crumb topping over the pie. Bake in an oven preheated to 350°F for approximately 30 minutes, adjusting the time according to your oven.

Remove the finished pie from the pan and leave it to cool. Cut into slices and serve.
