Sweet potato salad

This vibrant roasted sweet potato salad is bursting with warm spices, zesty lime, and fresh herbs. Perfect as a hearty side or a light main, it’s both nourishing and packed with flavour.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Preheat the oven to 200C and prepare a small roasting tin with baking paper.
Step 2
Cut potatoes into large bite size pieces and tightly pack them in the tin, season well, and toss with spices and oil to coat.
Step 3
Roast until tender and golden, about 40 min, giving them a stir partway through.
Step 4
Once cooled, transfer the roasted sweet potatoes and all their spiced oil to a mixing bowl.
Step 5
Add lime zest and juice, chopped chilli, crumbled feta, herbs, greens, walnuts and pumpkin seeds. Mix well, adjust the seasoning to your taste, and serve generously on a platter.
