Preparation
Step 1
First, prepare the ingredients for a fluffy cake with fresh juicy fruits. Preheat the oven to 350°F (175°C).
Step 2
For the batter, take a deep bowl and a fine sieve. Sift 1 2/3 cups (200 g) all-purpose flour into the bowl, add 1 tsp baking soda, 1 tsp vanilla sugar, a pinch of salt, and mix the dry ingredients. Adjust flour slightly depending on quality.
Step 3
In a separate large bowl, crack 2 eggs, add 3/4 cup (150 g) sugar, and beat until smooth and creamy.
Step 4
Pour 1 cup (250 ml) room-temperature kefir into the eggs and sugar mixture, mix until smooth.
Step 5
Add 1/2 cup (100 g) melted butter and mix until homogeneous.
Step 6
Gradually add the sifted dry ingredients in 2-3 portions, mixing thoroughly.
Step 7
Continue mixing until the batter reaches a smooth, uniform consistency.
Step 8
Cut 2–3 ripe, fragrant peaches into small cubes (or substitute with other fruits or berries).
Step 9
Grease a 9-inch (23 cm) silicone or suitable baking pan with butter. Spread the batter evenly.
Step 10
Distribute the peach pieces evenly over the batter.
Step 11
For the topping, mix 2 tbsp (25 g) sifted flour, 2 tbsp (25 g) sugar, and ~12 g softened butter, then sprinkle over the cake evenly.
Step 12
Bake in the preheated oven at 350°F (175°C) for 35-40 minutes until fully cooked. Remove from oven and release from the pan. Baking time may vary depending on your oven.
Step 13
Allow the fragrant, soft peach cake to cool slightly to stabilize the texture. Slice into portions and serve.
Step 14
Cook together, cook simply, and enjoy homemade dishes from accessible ingredients! Bon appétit!
