Sweet Pancake Rolls at Home

Preparation
Step 1
First, prepare the batter. Gather all ingredients. Eggs should be at room temperature. Wash thoroughly and dry with paper towels.
Step 2
Beat eggs with sugar using a whisk or mixer until light and frothy. To keep pancakes moist, add 1 tablespoon of 15-20% sour cream and 1 tablespoon of refined vegetable oil. Mix again until smooth.
Step 3
In a separate bowl, sift the flour to aerate it. Sift cocoa powder as well, optionally with the flour, and mix.
Step 4
Add half of the flour-cocoa mixture to the egg mixture and stir. Pour in warm milk (~86°F / 30°C) and whisk. Add the remaining flour mixture and baking powder, mixing thoroughly until smooth, like thin sour cream. Let rest 20 minutes.
Step 5
Prepare the filling. Take soft cream cheese or curd of any fat content. Wash and dry fruits.
Step 6
Place cream cheese in a bowl, add powdered sugar or 1 tbsp sugar, optionally vanilla sugar or cinnamon (½ tsp). Add 2 tbsp sour cream if needed and mix. For curd, blend or sieve until smooth.
Step 7
Peel and cut fruits into thin strips.
Step 8
Lightly oil a pancake pan and heat well. Pour batter with a ladle, spreading evenly. Cook each side just under 1 minute. Stack pancakes on a plate.
Step 9
Spread ~1 tbsp of cream cheese mixture on each pancake. Place fruit strips side by side.
Step 10
Roll the pancake tightly into a tube. Trim uneven edges and cut into equal pieces.
Step 11
Sweet Pancake Rolls with cream cheese and fruits are ready! Decorate with caramel topping, fresh mint, frozen berries, melted chocolate, or glaze. Serve with sour cream or sweet sauces.
