Sweet Enriched Rolls with Jam and Strawberries
The most beautiful, golden-brown kefir pastry. This is a great recipe for quickly making wonderful airy yeast pastry that is sure to please many people and pleasantly surprise them with its excellent taste.

Preparation
Step 1
Prepare all the necessary ingredients for making these tasty rolls with a sweet filling.
Step 2
Pour 300 ml of warm kefir, about 1 1/4 cups, into a measuring jug, then add 50 g of sugar, about 1/4 cup.
Step 3
Add 8 g of dry yeast, about 2 1/2 teaspoons, to the jug.
Step 4
Add 1 tablespoon of flour to the jug.
Step 5
Mix all the ingredients in the jug and set it aside for 15-20 minutes so the yeast can activate.
Step 6
Put 500 g of pre-sifted flour, about 4 cups, into a large bowl and add 1/2 teaspoon of salt.
Step 7
Add 10 g of baking powder, about 2 1/2 teaspoons, and 1 teaspoon of vanilla sugar to the bowl.
Step 8
Mix all the dry ingredients in the bowl well.
Step 9
Pour the activated yeast mixture into the bowl with the dry ingredients.

Add 2 egg yolks to the bowl.

Add 50 g of softened butter, about 3 1/2 tablespoons, and knead the dough while mixing all the ingredients together.
Step 12
Grease the dough in the bowl with a small amount of vegetable oil, cover it with a towel, and place it in a warm spot for 1 hour.

After 1 hour, place the dough onto the table and punch it down well with your hands.

Cut the dough into 4 equal parts, then shape each piece into a ball and grease the work surface lightly with vegetable oil.

Flatten and stretch each ball by hand into a rectangular sheet about 3 mm thick, about 1/8 inch.

Make cuts with a knife on each sheet slightly past the middle, leaving space for the filling.

Spread the required amount of apricot jam over the sheet in an even layer.

Add a few chopped pieces of strawberry on top of the jam.

Cover the filling with the dough and carefully roll the sheet into a tight roll.

Tuck in the ends of the roll and place it on a baking sheet lined with parchment paper, then leave it in a warm place to proof.

After 20 minutes, brush the rolls with beaten egg and place the baking sheet into an oven preheated to 170°C (340°F).

Bake the rolls for 40-50 minutes until golden brown, then remove the baking sheet from the oven, let the rolls cool slightly, and serve.
