Sweet Dried Fruit Soup
A highly nourishing, vitamin-rich fruit soup. Some may be surprised by the name of this recipe. Yes, soup can be made not only from vegetables and familiar savory ingredients, but also from dried fruit. This is a true storehouse of beneficial ingredients. Preparation
Step 1
Prepare the ingredients for making sweet dried fruit soup.
Step 2
Wash the dried apricots, prunes, and raisins thoroughly. My dried apricots were large, so I cut them in half, while I left the prunes whole.
Step 3
Bring 500 ml / about 2 cups of water to a boil in a pot. Add the dried fruit and bring it back to a boil. Cook the dried fruit at a moderate boil for 10 minutes.
Step 4
If desired, add cinnamon to the soup. It will give a lightly spiced flavor and aroma. Cook the dried fruit until soft. It is best not to overcook it.
Step 5
Dissolve the starch in 50 ml / about 3 tablespoons of water until there are no lumps.
Step 6
To thicken the soup slightly, pour in the starch mixture in a thin stream while the soup is boiling. Stir the soup in circular motions so the starch spreads evenly through the liquid.
Step 7
Immediately, before the starch fully sets, pour the apple juice into the soup and mix.
Step 8
Add sugar to taste and mix.
Step 9
Bring the soup to a boil and immediately remove it from the stove. Let it stand covered for 15 minutes. Fruit soup can be served warm or cooled. Enjoy!
