Step 1
How to make mashed potatoes with sausages? Prepare the needed ingredients. To make the “flower” look neat, choose the right eggs and sausages: use very fresh, small eggs (size S / C2) and thin, long sausages (about 14-16 cm / 5.5-6.3 in). Wash and peel the potatoes. If the potatoes are large, cut them into smaller pieces. Cover with cold water and bring to a boil over medium heat.

While the potatoes cook, make béchamel sauce. Heat the milk until hot (not boiling). In a saucepan or small skillet over low heat, melt the butter, stirring constantly with a spatula. Nonstick cookware works best.
Step 3
Add the flour to the butter and stir until smooth. Keep stirring constantly.
Step 4
Gradually add the milk, 1-2 spoonfuls at a time, immediately stirring it in and smoothing the sauce with the spatula.
Step 5
Add the rest of the milk and bring to a boil. Salt the sauce to taste and remove from heat. The sauce should be runny. Even if it seems too thin, don’t worry - béchamel thickens slightly as it cools.
Step 6
Cook the potatoes for 25 minutes after they come to a boil. When ready, drain all the water.
Step 7
Add butter and mash the potatoes with a potato masher. Season with salt and pepper to taste.
Step 8
How to serve sausages with mashed potatoes beautifully? Make this casserole! Use a rectangular baking dish about 30×20 cm (12×8 in). If needed, grease it with oil. Spread the mashed potatoes evenly over the bottom using a spoon or spatula.
Step 9
Divide the dish into 6 equal squares. Along the dividing lines, use a table knife (or the handle of a spoon) to press grooves about 1 cm (⅜ in) deep. Make these lines about 1.5-2 cm (⅝-¾ in) wide, keeping the mashed-potato squares equal.

How to make the gravy for mashed potatoes with sausages? Coarsely grate the mozzarella. Rinse the herbs and dry them well. Set aside a few sprigs to decorate the casserole as “flower stems.” Remove tough stems from about half the herbs and finely chop the leaves.

Add the chopped herbs to the sauce and mix until smooth.
Step 12
Remove the sausages from their packaging. On each sausage, make crosswise cuts up to about halfway through. Join the ends together and secure with a toothpick. If the cuts are too shallow, the sausage may break when bending, so work carefully. Fit the sausage ring onto a mashed-potato square; if it sits well, repeat with all 6 sausages.

Fill the grooves in the mashed potatoes with the sauce.

In the center of each square, place mozzarella first, then the sausage on top. Place them lightly, without pressing down, so the egg white can spread and mix with the cheese without covering the sausage. Trim any visible toothpick ends with scissors or kitchen shears.
Step 15
Do this step very carefully. Crack an egg and, keeping the yolk intact, gently slide it into the center of the sausage ring. Most of the egg white should flow down into the square. Bake on the middle rack in an oven preheated to 180°C / 356°F for about 25-30 minutes.
