Sun-dried tomato & Rosemary Puff Pastry Palmiers

Preparation
Step 1
Begin by gently softening the puff pastry with a rolling pin, then roll it into a thin rectangle.
Step 2
Chop dried tomatoes very finely, almost to paste.
Step 3
Spread over a layer of tomatoes and a sprinkle of rosemary for a savoury twist.
Step 4
Roll both long edges toward the centre to form a double-spiral shape, sealing the seam with egg wash. Chill the roll until firm.
Step 5
Once chilled, slice the pastry into thin rounds and lay them cut-side up on a baking tray. Brush with egg and bake until golden, crisp, and delicately puffed.
Step 6
Allow to cool slightly before serving as elegant, bite-sized canapés.
