Stuffed Zucchini Boats with Tuna

Step 1
First, prepare all the ingredients and spices needed for this flavorful and tender baked dish.
Step 2
Slice four young zucchinis into portions. Bring a pot of water to a boil, add the zucchini pieces in two batches, and blanch them for 3-4 minutes. Then transfer them to a large plate.
Step 3
Carefully scoop out the centers from all the blanched zucchini pieces to form “boats.”
Step 4
Heat 1-2 tbsp of vegetable oil in a frying pan over medium-high heat. Add ½ chopped onion, stir occasionally, and fry until golden.
Step 5
Finely dice the zucchini pulp removed earlier.
Step 6
Add the chopped zucchini centers to the pan with the onion. Stir occasionally and fry over high heat.
Step 7
In a deep bowl, crack 1 egg, add a pinch of salt, and whisk well.

Add 100 g (about 3.5 oz) of canned tuna to the bowl with the beaten egg.

Add 50 g (about 1.75 oz) of small pieces of whole-grain yeast-free bread, a pinch of basil, and mix everything together thoroughly.

Press 1 clove of garlic through a garlic press into the pan with the zucchini. Add salt, and a mix of black and red pepper, stir, and fry for another 2 minutes. Let the mixture cool slightly.

Transfer the sautéed zucchini mixture into the bowl with the tuna and mix well until evenly combined.

Fill the zucchini boats with the prepared stuffing and place them on a baking sheet greased with 1-2 tbsp of vegetable oil. Bake in a preheated oven at 350°F (180°C).

Bake the stuffed zucchini for 5-7 minutes, then remove from the oven and serve warm on individual plates.
