Stuffed Eggs with Mushrooms

Step 1
How do you make stuffed eggs with mushrooms? Prepare the ingredients. Use large eggs, preferably farm-fresh. Besides being larger, such eggs usually have a bright, beautiful yolk.

Peel the onion and dice it.

Heat the vegetable oil in a skillet. The oil can be any kind: sunflower, corn, or olive. Add the onion and fry it over low heat for about 5 minutes, until golden.

Wash the mushrooms and dice them. I use fresh king oyster mushrooms. But you can use any mushrooms, either fresh or frozen. Thaw frozen mushrooms in advance and drain off the excess liquid.

Add the mushrooms to the onion and fry for another 5-7 minutes, until the mushrooms are fully cooked.
Step 6
At the end, salt the mushrooms. If you like, you can also add pepper, garlic powder, or one minced clove of fresh garlic.

Add the sour cream to the mushrooms, mix everything together, and cool slightly. Sour cream can also be replaced with mayonnaise, but in that case the dish will be more calorie-dense, so keep that in mind.

Hard-boil the eggs. To keep the eggs from cracking during cooking, place them in cold water and cook over low heat. Boil the eggs for 9 minutes after the water comes to a boil, then cover them with cold water and let them cool. The sudden change in temperature helps the shells peel more easily.

Peel the eggs, cut them in half, and remove the yolks.

Mash the yolks with a fork and add them to the mushrooms. Mix well. The filling for the eggs is ready.

Fill the egg white halves with the prepared filling and serve immediately.
