Strawberry Pie Without Butter, Light and Fragrant
A tender, airy, and fragrant pie with strawberries. Strawberry pie is incredibly simple, yet very tasty. It is soft and delicate, with pieces of juicy strawberries, and it is made without adding butter. Be sure to try this pie during fresh strawberry season.

Preparation
Step 1
Let’s prepare the strawberries. Rinse them under running water and pat them dry with a paper towel. Cut the berries in half or into quarters, depending on their size. Also prepare the baking pan in advance and grease it with vegetable oil, this is the only oil you will need. My pan is 21 cm, about 8.3 inches, in diameter.
Step 2
Let’s make the batter. Put 2 large eggs, sugar, and a pinch of salt into a bowl. Beat everything with a mixer until fluffy. The mixture will become lighter in color and increase in volume.
Step 3
Add sour cream and any flavoring to the egg-sugar mixture. I used strawberry liqueur, but you can use vanilla extract or vanilla sugar. Mix again with the mixer so that everything combines.
Step 4
Prepare the dry mixture for the batter: add cornstarch and baking powder to the sifted flour. The starch gives the pastry a more crumbly texture and also absorbs excess moisture from the berries. Mix so that all the ingredients combine well.
Step 5
Add the dry mixture to the egg-sugar and sour cream mixture. Mix until smooth, first with a spatula so the flour does not scatter all over the kitchen, and then with a mixer. The batter is neither runny nor thick. It falls from the whisk in a ribbon.
Step 6
Put one third of the batter into the pan, spread it out, and place the prepared strawberries on top.
Step 7
Then spread the remaining batter, covering all the berries. Smooth the surface slightly.
Step 8
On top, if desired, place a few strawberries, sprinkle them with sugar, and put the pie into the oven for 30-40 minutes at 180°C (350°F). Adjust according to your oven. The pie will brown nicely and rise well.
Step 9
Check the pie for doneness with a wooden skewer or toothpick, it should come out completely dry, without wet crumbs. Let the pie cool.
Step 10
Dust it with powdered sugar and serve. Decorate as you like. The pie turns out tender, soft, airy, and very fragrant. And most importantly, without butter. Enjoy your meal!
